Buckeyes for My Honeyboy

You will need:

2 cups creamy peanut butter
1/4 cup butter
3 3/4 cups powdered sugar
2 cups semi-sweet chocolate chips
2 tablespoons shortening

Beat peanut butter and butter in large mixing bowl until creamy.  Beat in powered sugar until mixture holds together and is moist.  Shape into 1 inch balls and place on cookie sheet lined with wax paper.  Freeze for 1 hour.

Melot chocolate chips and shortening in microwave for 1 minute at a time. Stir each time until chips are melted.

Dip peanut butter balls in melted chocolate using a toothpick.  Leave a small part of the center uncovered.  Refrigerate until chocolate is set.
