This is a very dense and moist recipe. You will need:
6 ripe bananas (as bananas ripen and do not get eaten I throw them in the freezer - when ready to use thaw slightly and peel - they make wonder banana nut bread)
1/2 cup applesauce (this is better than using oil and makes the bread really moist)
2 eggs
1 1/2 cups sugar or 1 cup honey
1 teaspoon baking soda
1 teaspoon salt
4 cups unbleached all purpose flour
1 cup chopped nuts (optional)
Preheat ove to 350. Grease 2 9X5 loaf pans. In a large mixing bowl beat first 3 ingredients. In separate bowl combine dry ingredients. Slowly at dry mixture to wet mixture. Stir in nuts. Bake for 40-50 minutes. Use a toothpick and poke the center. If it comes out clean it is done.
